About The Proof Room

The Proof Room is a bakery with one starter, fed since 2019, and a stubborn refusal to rush it. Loaves get a long cold ferment - 36 hours, sometimes 48 - which is why the crust cracks the way it does and why the crumb tastes of something other than yeast.

Alongside the bread: laminated pastry on weekends, a rotating tart that follows whatever fruit is good, and celebration cakes made to order. The cakes are the quiet speciality - three layers, not too sweet, finished in a way that photographs but is mainly built to be eaten.

Wholesale goes out to a handful of Charlotte coffee shops on standing weekly orders. Event and wedding work is booked directly, usually six to eight weeks ahead.

Standing Friday order for the shop. Bread is consistently excellent. Only reason it is not five stars is that the pastry sells out by nine and I would happily take twice as much.

We ordered the three-layer olive oil cake for my mother's seventieth. It looked like a magazine and, more to the point, it was gone. Not too sweet, which was exactly the brief.
